When I was first getting into the homesteading lifestyle, one of my huge goals was to learn canning. I wanted to be able to preserve the harvest but even more so, I wanted to take Big Food company labels out of my cupboard. We wanted to get away from the boxed and store packaged foods. Canning is extremely intimidating for many people, myself included and oh how I wish “The Organic Canner” had been published at the time! It would have saved me from making more than one mistake but I will get into that later. The things that I enjoyed about this book is the fact that it is both a “how to” and a recipe book! It’s like getting two for one!
Daisy Luther is the author of this wonderful book and she also has a blog: The Organic Prepper.ca. She hails from the Pacific Northwest and I have been following the blog before I even started my own. I appreciate her writing style not only because it is clear and concise, it also has a warm and friendly voice to it that makes you feel like she is in the room with you, just talking.
This is a fantastic book for everyone: from the complete newbie to those who are more proficient. It walks you through the steps for water bath canning AND pressure canning. Daisy even gets into the finer details, explaining the science of why canning works and what is happening during the process. Along with the step by step directions are pages and pages of recipes and ideas that are sure to inspire and get the imagination flowing. I am a big fan of opening my cupboard and seeing shelves of home canned food that is also ready to heat-and-eat! TAKE THAT, Big Food! I have canned up soups or meat and beans before but some of these recipes shared in the book will definitely take me to a whole new level of awesome meal preparation. I love the convenience on those chaotic days when the last thing you want to do is make something from scratch. Instead of reaching for a hamburger helper type mix or some other chemical filled ‘food product,’ I reach for a jar of homemade food where I know where the food actually came from, how the food was processed, and know that what I am eating is actually good for me. Learning to can your own food gives you this benefit and so much more besides!
The book teaches you ways to preserve your harvest while keeping it fun and that is what I appreciated the most. Very well done and highly recommended! If you don’t want to wait to get your hands on a copy of The Organic Canner, click here to buy on Amazon!

That is exactly how I started out. Now I am making beans/meat/onion jars that are WONDERFUL to take to work for a quick ‘heat and eat’ meal. I am going to have a blast this coming harvest season, playing with all the new recipes! Good luck!

Going all organic after learning of my disease. I just started canning last year did grape juice, pears, and apples. Need to learn pressure canning for my ducks and the deer in my freezer.

Canning is a FANTASTIC way to extend the life of meats that have been in a freezer for several months.
